Abstract

Το Λιοτρίβι, είναι παλιά λέξη για το ελαιουργείο. Στο ελαιοτριβείο ο βασικός µηχανισµός ήταν οι µυλόπετρες: Συνήθως κυλινδρικές ή σπανιότερα κωνικές πέτρες, µία έως τέσσερεις, που κυλίονται κυκλικά πάνω σε επίπεδη επιφάνεια αλέθοντας τις ελιές. Συνήθως η άλεση γίνεται µέσα σε κλειστό χώρο που ονοµάζεται Κόθρος. Μέσα στον Κόθρο αδειάζεται ο ελαιόκαρπος τον οποίο πολτοποιούν οι πέτρες περιστρεφόµενες. Πολύ παλιά, η κίνηση περιστροφής των πετρών γίνονταν µε ζώα, συνήθως γαϊδούρια ή άλογα, αργότερα µε µηχανικά µέσα. Όταν ο πολτός ήταν έτοιµος, (κατά την κρίση των υπευθύνων) µεταφερόταν σε ειδικά σακιά που λέγονταν µουτάφια ή τσόλια. Αυτά τοποθετούνταν σε πιεστήριο µε κοχλία, κοινώς «βίδα», που τα πίεζε και έτσι έβγαινε το λάδι. Η βίδα περιστρεφόταν χειρονακτικά. Η εξέλιξη του ελαιουργείου έχει περάσει από διάφορα στάδια ώστε να φτάσει στο επίπεδο στο οποίο βρίσκεται σήµερα και να µπορεί να καλύπτει όλες τις απαραίτητες ανάγκες του σύγχρονου ανθρώπου µε την βοήθεια του ηλεκτροµηχανολογικού εξοπλισµού. Για να γίνει σωστά η εγκατάσταση αυτών των συστηµάτων είναι απαραίτητη η εκπόνηση µελετών που να διέπονται από συγκεκριµένους κανονισµούς και πρότυπα ώστε να εξασφαλίζουν την άνετη λειτουργία και µε το όσο γίνεται µικρότερη την ανθρώπινη παρέµβαση.

"Liotrivi" is an old word that was used instead of the word oil mill.In the oil mill the basic mechanism was consisted of the millstones.They usually were cylindrical or rarely conical stones,from one up to four,which were rolling about in a cyclical way on a flat surface and this way they were milling the olives. Usually the grinding was taking place indoor in a restricted area called "Kothros".So, inside "Kothros" people are emptying out the olives, which the millstones are mashing while they are rotating.A long time ago the rotary movement was becoming with the assistance of animals, usually donkeys or horses,and later on with mechanical means. Next when the pulp was ready (according to the judgment of the manager),it was transferring into specific gunny sacks called "moutafia" or "tsolia".Those were placed in a presser with screw, commonly known as bolt, that applied pressure and this way the oil was extracted. The development of the oil mill has been through a lot of different stages so that it manages to reach the current advanced level and be able to cover the modern people's necessities with the assistance of the electromechanical equipment. It has to be mentioned that in order to achieve the proper installation of these systems it is necessary to be conducted studies that will be ruled over by specific regulations and formulas. Undoubtedly, this method will ensure the seamless operation with the less possible human intervention.
